When it's just toooooo hot to cook, or you're really in a hurry, this is my go to dish. Fabulous almond chicken/brocolli/rice pilaf.
Start with a package of Rice Pilaf and cook as directed except reduce water to 1 3/4 cups and add 2 cubed bonesless-skinned chicken breast.
Rice Pilaf and chicken simmering for the recommended time of 17 to 25 min. Keep covered while cooking.
When the Rice Pilaf is done, stir in the broccoli, a couple of dashes of soy sauce (to taste) and a handfull of slivered almonds.
Serve and enjoy. Super easy and super fast for all those hot or busy days.
